Meat is initially separated from a carcass during the butchering process by being cut into large sections or “primals” from which retail cuts are derived. Primal cuts vary by animal but typically include sections such as chuck, rib, loin, leg, shoulder, shank, and rack, among others.
Bones in meat that has been cut can be sharp and/or jagged and can easily puncture a bag during vacuum sealing or transportation. Bone guard products are typically used when packaging bone-in meat for vacuum sealing. Bone guard materials such as polypropylene or cotton sheets are separate from shrink bags and inserted manually during the packaging process. For high-speed, automated packaging systems, integrated bone guard protection is the preferred option and can be custom configured for each cut during bag manufacture.
